At Picnic Charcuterie we take pride in producing high quality cured meats and provisions using local and seasonal BC ingredients. Practicing traditional production and aging techniques, and using only the minimum required preservatives, we strive to purvey an exceptional product. A finalist in BC’s new small business of the year for 2016, Picnic Charcuterie has quickly established itself as a producer of high quality products within the Tofino marketplace.
At Picnic Charcuterie we respect and practice the craft and traditional techniques of food preparation that have been used for centuries, many of which have cultural roots. These techniques take patience, and value every part of an animal. Crafting respects the time, effort, and life given to raise and harvest the ingredients we use. We believe in directly supporting the production and harvest of local and ethically raised goods, and prioritize sourcing ingredients from Vancouver Island producers.
We produce our meats on site, in delicious small batches to guarantee the quality, and we change, add, and get creative as seasonal ingredients become available. We also source goat, cow, and sheep based cheeses from the best local and international producers. The varieties may change but we take pride in ensuring the same flavourful quality remains. In addition, we make the best and healthiest seasonal preserves, jellies, and mustards for you to try with our food or take home and to compliment your own food.
